Greek Pizza For Dinner Tonight?

I subscribe to Body + Soul Magazine, and have found that I really love it. Not long ago in one of their issues they had a recipe for a Whole Wheat Greek Pizza, so decided to give it a go. It came out fairly tasty, I might add . If you love pizza then you might like their recipe. Below you will find the recipe, which I thought might be a great recipe to share with all of you, because almost everyone eats pizza. Don’t forget – opt for organic ingredients as much as possible.

Ingredients:

  • 2 tablespoons olive oil, plus more for baking sheet
  • 1 cup cherry tomatoes
  • 1 clove garlic, coarsely chopped
  • Coarse salt and freshly ground pepper
  • Whole wheat flour, for work surface
  • 1 pound whole wheat pizza dough, thawed if frozen
  • 1 cup grated haloumi cheese
  • 2 tablespoons pine nuts
  • 2 cups baby arugula
  • 1 tablespoon red wine vinegar
  • ¼ cup pitted kalamata olives, coarsely chopped

Directions:

1.Preheat oven to 450 degrees. Turn a large baking sheet upside down, rubbing it with oil. Place tomatoes, garlic, and 1 tablespoon oil in a food processor, seasoning it with salt and pepper. Pulse three to four times until all ingredients are incorporated but chunky.

2.On a lightly floured surface, use a rolling pin and your hands to roll and stretch dough until large enough to cover the surface of the baking sheet. If dough becomes to elastic let it rest for a few minutes. Transfer to prepared baking sheet.

3.Spread tomato sauce evenly over dough, leaving a 1-inch border all around. Top it with cheese and pine nuts; season with salt and pepper.

4.Bake the pizza until the crust is golden, about 15 to 20 minutes. Toss arugula with vinegar and add 1 tablespoon oil, seasoning it with salt and pepper. Sprinkle arugula and olives over pizza.

Making pizza can be a lot of fun. While the toppings for this pizza worked great you can also choose different toppings. Use your imagination, and have fun with it. The possibilities are endless when it comes to choosing delicious toppings for a pizza. A fun idea to get creative when it comes to the kids, especially since most don’t like their vegetables, is to play around with using different fruits in place of things such as pepperoni.

    being greek myself, i often use Halloumi cheese in pizza and other pasta dishes….this sounds like a fun recipe, though I’ve never heard of greek pizza before/
